Piña Colada Inspiration Strikes

Michelle deep in thought: “Now how do I get that *special something extra* a good rum adds to my piña colada cupcakes without overpowering the delicious pineapple curd filling or lightly flavored coconut buttercream? I don’t want rum flavoring to overpower the cake either, that’s where I blend the tropical flavors. I also don’t want to add actual alcohol because tropical flavors have kid-appeal and alcohol does not. But leaving it out leaves the cupcakes definitely lacking. I am making piña colada cupcakes not just a tropical smoothie cupcake…”

God: “A thin layer of lightly flavored rum flavoring infused brown sugar curd on the cupcakes before you pipe on the buttercream.” 

Michelle: “SAY WHAT?!!! That’s brilliant!!! I’ve never heard of such a thing!!!!!!!!” 

And I’m not surprised. Literally cannot WAIT for this stuff to cool…
